Six states, six winners and one national winner

This year’s National Collegiate Veal Competition had so many great, creative and delicious entries that it was not easy to choose the winners. Beginning in February, culinary students from six states chose to enter a veal recipe contest for scholarships. Beef Checkoff-funded Veal – Discover Delicious and State Beef Councils have partnered to host this competition for culinary students across six states!

Participating culinary students had to watch an online video to learn about the humane practices of today’s veal farmers. After watching this virtual farm tour, the cooking students headed into the kitchen to create a unique recipe that would work for a restaurant entree menu.

The competition was tough, but this year’s state winners are:

Arizona State Winner: Leslie Lecomte of the Arizona Culinary Institute won with her Wienerschnitzel Bites with Lemon & Tarragon Mustard

Florida State Winner: Miami Dade Community College’s Brejean Guzman won with his Veal Egg Rolls

New York State Winner: Nathan Roof of Finger Lakes Community College won with his Lemon Parmesan Grilled Veal

Ohio State Winner: Andrea Lazos of Cincinnati State Technical & Community College won with his Ginger Veal Wontons with Tamarind Sauce

Texas State Winner: Dallas College’s Sharday Melvine won with her veal chops and polenta with a sweet and spicy pepper sauce

Wisconsin State Winner: Jasmine Bylander of Chippewa Valley Technical College with sticks and dip

In the end, Arizona’s Leslie Lecomte took home the 2022 winner of the State and National Veal Collegiate Competition. People were also able to vote online for their favorite entry, choosing a winner from the People’s Choice contest. This year’s People’s Choice winner tied for Jasmine Bylander with Sticks and Dip and Andrea Lazos with Ginger Veal Wontons with Tamarind Sauce!
